2 teaspoons dried oregano
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons smoked paprika
2 teaspoons ground coriander
2 teaspoons ground cumin
3 teaspoons kosher salt
1 teaspoon freshly ground pepper
1/4 cup extra virgin olive oil
1 tri tip

I doubled it and made two. when you mix everything up it will be like a paste you cover the steaks with, I think a dish or platter works better than plastic bags for this.
 
I'll post my dry rub mix and KC style bbq sauce recipe again. If there's a better BBQ sauce out there, I haven't found it yet.
 
I'm cooking beef shanks tonight. And in looking through all my recipes I found a printed recipe for KC BBQ sauce. Maybe yours.
 
I made Tyler Florence bbq sauce and did up some chicken thighs. I shouldn’t have done that. Holy smokes I can never go back to store bought sauce…
 
I'm stuffing some jumbo shrimp with lobster meat, filet mignon, and cauliflower au gratin for New Year's Eve. Will pop open a 2022 50 yr anniversary Caymus Cab to wash it down with.

A long time ago I tried making sauce. Couldn't get the texture. I could probably do it now. NGL sometimes it's fun to try different sauces. But at some point I'll try again.

Damn man. Living large.Love seafood but don't make it a lot at home. Daughter doesn't do seafood and wife only does shrimp and oysters. Stuffed shrimp sounds fucking good.

I did some bacon wrapped shrimp that sat in orange marmalade, Worcestershire, Soy Sauce and a pinch of sugar overnight. Skewer them up with some peppers, onion, mango and pineapple. Good stuff! Lay it on top of either a bed of rice and some mango salsa red snapper or grouper and you have a hell of meal
 
Made flank steak fajitas yesterday, absolutely slamming. Cooked hot and fast on big green egg. Marinated 24 hours with a blend of lime, peppers, garlic, sweet onion. fantastic

That sounds good. Im going to try that. I used to make a similar marinade for tuna steaks on the grill. It had orange juice, orange zest, Worcestershire and garlic in it.

Nice, I need to change up my shrimp recipe and that sounds delicious. Been doing more of a Peri Peri and wrapping the shrimp around linguica sausage, it's really good but I've made it too many times now.

I had some 15 bean mix to sort of make a half ass baked bean. Had some frozen chicken breast I diced up and threw in. It was just decent.

What do you guys usually have with BBQ? Summer time my potato salad is a solid go to. Some times I'm lazy and open some Bush's beans and doctor them up. Every once in awhile I like a good cole slaw. Any thoughts?
 
Thought about smoking some wings this weekend but it's supposed to be like -30F so fuck that... I think I'll deep fry them instead.

My wife does potato and macaroni salad that are pretty damn good with almost everything I smoke.
 
Rib rub:

1 cup light brown sugar
1/2 cup smoked paprika
1/4 cup and two tablespoons kosher salt
2 tablespoons onion powder
2 tablespoons cayenne pepper
2 tablespoons freshly ground pepper
2 tablespoons garlic powder
2 tablespoons ground coriander
 
bbq sauce
tie up a small bunch of time with a slice of bacon and butcher twine
2 tablespoons olive oil
medium heat
cook about 4 minutes till crispy
add 1/2 a diced onion and 2 sliced garlic cloves. cook till starting to caramelize
(5 minutes)
add
2 cups ketchup
4 tablespoons brown sugar
1/4 cup molasses
2 tablespoons red wine vinegar
1 tablespoon mustard powder
1 teaspoon ground cumin
1 teaspoon paprika
fresh ground pepper to taste

bring to a boil then simmer for 3 minutes
remove bacon/thyme bundle
 
I had a printed recipe from someone here and I had written the date. 1-1-17. So I did a search and we were all talking about our NYE grub and sharing recipes and shit. It was pretty cool.

Fall season upon us, Beef jerky, Salmon jerky,....Beef/pork sticks.....

I'm not a big make my own spice rub mix since there are others who have put the time and trouble into perfecting them. I find the ones I like and use them. I go into my local Bakers market and beeline it to their markdown meat section and see what's available. Take it home and throw it on the smoker.

Thanks to all here that have posted recipes for inspiration.
