Little bit rare for me unless that was a prime rib which is what it looked like. Those Traeger smokers kind of look cheaply made.
Mine is really high quality but it’s one of their high end models.
 
He put a good cook on it. Good seasoning apparently. But why? At 50 pounds is that even a steak?
Just for clicks. It was the whole primal of what should be cut into round steaks.
It would probably been better as jerky.

My grandmother roasted a sheep's head in the oven once when we were kids. Put it out on the table with tortillas.

And I like eating cabeza meat on a taco from a taco truck. But I don't know about this cave man shit. Meat us probably damn good. But that shit is weird.

I caught some youtube clips hyping it up went to the asian market/grocer near my place and bought that and Kewpie mayo haha.

I'm likely over utilizing those two condiments but they are legit.

They opened up this huge Asian supermarket in town. They have everything and at really good prices. There are aisles and aisles of condiments. Every kind of seafood imaginable, fresh or frozen.
 
Take a Pork Shoulder steak
Heat the oven to 350
Drizzle a generous portion of farm raised honey, chili powder, and cinnamon.
Cook for 37 minutes.
