I'm not usually a big tri tip person but I bought a couple of prime ones at Costco and rubbed with the Santa Maria rub. Got it up to temp (125) at 225 then seared it at 500 4 minutes a side. Shit was delicious.
Tri tip is hella good. But honestly it's hard to mess up. That said I did one in the smoker and it wasn't that great. But on my charcoal grill it usually comes out great.

Did this on the pellet grill and it came out great. Beef and charcoal do seem to just go together though.

It's totally a grilling only cut of meat. I've made it in the crock pot before for tri tip sandwiches and wasn't crazy about the flavor. Hard to describe exactly what it was, but basically almost too strong.
 
Hold up. Did I read $34 for 2 jars? Holy shit.
 
My Mom is from New Mexico. I have green chili In my DNA. That looks like a damned good idea. Like beef carnitas maybe.

You know a good Chuck roast works great in a crock pot. I might try your sauce and a roast in the crock pot.
You could probably do this same thing with chuck roast but she's always done it with tri tip and it is freaking good.

I did it the same way, except for sandwiches instead of tacos. There is just something about the flavor of tri tip that doesn't really work for me except for grilling. I'm mostly a carne asada guy when it comes to making tacos at home but it's almost a waste given the number of food trucks around here. We've got a couple within walking distance, there's even a dude the just sets up in the shopping center parking lot near us that's not even a truck, just one of those big Blackstone style griddles cooking it up.

My favorite taco meat is skirt steak, makes great carne asada or fajitas.

Really no other way to do it if you’re doing it right. Pastor is my favorite though but you almost have to get that from a truck that has it cooking on a spit. Shave it off the spit and then throw it on the grill for a quick char… so good.

That Al Pastor I made on the pellet grill kicks the shit out of any place around here. Al pastor has always been my favorite taco. I'm not saying they don't have good here, just the one I made at home was amazing.

those are 40 oz jars but when we do buy it we get it at Costco much cheaper

I was sure I looked at the size. Rookie move.

Found a 3 pack of 16oz for $25. $8 for a bottle of salsa is a but pricy. But there are many other options.

There is a little dispute because there is 505 and another brand I can't recall.

Something about being actual chili or Hatch chili from New Mexico.
 
If you're a freak for green chili or roasted chili some if the Safeway stores are going to have one of those roasters at some of the stores.

To me the smell is heavenly. My local store on Del Paso Rd is doing it Saturday but I will be on a plane.

Or you can try this place in Stockton on Waterloo Rd in Stockton. Many different peppers and different heat levels. My parents went there for years to get green chili.

 
I'm entered in a salsa contest at work.

Or more accurately, my mother-in-law is entered into a salsa contest at work with me serving as her proxy.
