Some of those smokers like the Kumoda, Green Eggs are so pricey. I have an offset smoker. Just make sure you don't buy one of those cheap knock offs made of tin
 
I lost two really good friends this year. Both died tragically young and just found out another friend is in the battle for his life with stage 4 melanoma. All in their 30's. Breaks my heart.

Yeah.That's bad Bro.I'm at an age (53) where people dying my age or younger is still pretty tragic.But someone in their 20s or 30s is just awful .

Like I said I don't usually sauce my best.It tastes pretty good by itself.But I think I'll try that sauce.It sounds like that Carolina style mustard vinegar base that you don't really see out here.

Meant to put some apple juice in the marinade.But it was alright.Wife doesn't like too much vinegar.Also threw some pecan chips on the fire.3 hours.Pretty tender.Didn't have an overwhelming smoke/BBQ taste to it.
I agree with you. No sauce will fix bad BBQ and really good BBQ doesn't really need anything. I try to find good BBQ wherever I go. The different regional styles are interesting. I like them all.
 
Ive been using natural charcoal in my smoker and then I put the flavored wood chips in usually hickory or pecan wood. I tend not too go crazy with the wood because it can tend to overpower your meat. Here's a kick ass bbq sauce recipe that I make which can use with just about anything. Great on ribs, pulled pork and chicken. Make this and you won't eat anything else.

KC Classic BBQ sauce Makes 6 cups

2 tbs chili powder
1 tsp black pepper
2 cup catsup
1/2 cup yellow mustard
1/4 cup cider vinegar
1/4 cup lemon juice
1/4 cup steak sauce
1/4 cup molasses
1/4 cup honey
1 tsp hot sauce
1 cup dark brown sugar
1 med onion chopped
3-4 cloves minced garlic
3 tbs veg oil

Saute onions in oil until soft. Add dry spices to release oils, then wet ingredients. Bring to slow boil, then cook over low heat for 15-20 minutes. You can omit the honey of you want to cut down on the sweetness. Also can cut back on the vinegar depending on your own preferences. This makes enough to last you for a while. I usually store in large mason jars.

I just used Shulas steak sauce because it was on sale. Lol. But any of your favorites can work.

I've never done a white sauce. I've seen it on one of the cooking shows. Looks interesting

Location is kinda irrelevant now with how sophisticated indoor operations have become. That said, the Emerald Triangle is up there with the best in the world.

You're right. I lost my wife of 42 years, along with a very close cousin. 2016 truly sucked.

@Sabers I am sorry for your loss. I talk shit here and generally try to be light hearted but I do care about you guys. I hope this next year is full of healing and turns out to be the year of your life. I'm in your corner.
